Gaddis brings to McCaw Hall a strong dedication to supporting local farms, a loyal culinary following and much critical recognition. Gaddis designed and operated the popular Porcella Urban Market and Bistro; was executive chef and partner of the highly acclaimed Bada Lounge, and worked in several Seattle establishments such as Pirosmani, El Gaucho, The Ruins, Flying Fish and Roy's. Chef consultant Holly Smith honed her culinary sensibilities through many years of hard work at Dahlia Lounge and Brasa. She set out on her own in 2000 when she opened Café Juanita in Kirkland. The new culinary team enables Savor to dramatically expand the concept of fine dining at the 2,900-seat McCaw Hall. Their focus and approach match Savor's mission to offer menus that spotlight local vendors and the freshest available meats, cheese, seafood and produce. Patrons will discover a completely revamped cafe, Savor's "small bites" offerings served in the Promenade Barista and Grand Lobby Wine Bistro, a wide selection of wines by the half-bottle, with an emphasis on wines of the Pacific Northwest, and Smith's own "Poco Carretto" gelato created with fresh, organic, local ingredients.
