Remember wine coolers? Not so cool. What is cool: wine cocktails. A classic wine cocktail is the Americano, part vermouth and part Campari, a liqueur. Another standby is the Bellini, a mix of sparkling wine, usually Italian prosecco, and peach puree. Ready to mix up your own? Here's one to try.

Prospector
2 ounces blended scotch l 3/4 ounce sweet Madeira l 1/2 ounce Benedictine l 3 dashes bitters
Combine all ingredients in a large tumbler filled with ice. Stir and serve. Makes 1 cocktail.
