Easy dinners finish off school year

Looking for something different to do for dinner this weekend? Something quick to fix and easy, too?
Camano Island cook Susan Bender offers up a casserole that should be just the ticket.
And another fast fixer-upper supper comes to us courtesy of Forum friend JoBee, also of Camano Island.
"Little League moms, who don't want to spend a lot of time in the kitchen this summer, can try making great-tasting campfire meals in the oven," she writes. "This Boy/Girl Scout hobo stew is a good one to try.
"A piece of tinfoil can wrap up a great-tasting meal in a matter of minutes, that goes right into the oven.
"Using a clock-controlled oven makes dinner ready and still warm when the game is over and the gang walks through the door."
Turkey dandy
8 ounces medium egg noodles
1 pound ground turkey breast
1 tablespoon butter
2 cans (8 ounces each) tomato sauce
1 cup cottage cheese
1/4 cup sour cream
1 package (8 ounces) cream cheese, softened
1/2 cup chopped green onions
3 tablespoons butter, melted
Cook noodles according to package directions; drain and set aside. In frying pan, saute turkey in the 1 tablespoon butter until no longer pink.
Stir in tomato sauce and simmer for a few minutes.
In a medium mixing bowl, combine cottage cheese, sour cream, cream cheese and green onions, mixing thoroughly.
Grease a casserole dish with a little butter and spread half the noodles over the bottom. Cover noodles with all of the cheese mixture, then the remaining noodles.
Drizzle the melted butter over all, then top with the turkey-tomato sauce mixture.
Bake, uncovered, at 375 degrees for 30 to 40 minutes or until bubbly.
Hobo stew
1 hamburger patty per person
Onion slices
Carrot slices
Cubed potatoes
Salt and pepper
Additional seasonings and vegetables as desired
For each family member and/or guest, wrap hamburger patty, onion, carrots, potatoes, salt, pepper and, if desired, additional seasonings and vegetables in a packet made of aluminum foil; seal tightly, allowing a little room for expansion.
Bake packets at 350 degrees for 50 to 60 minutes.
