So that’s how they got that Michelin star: Among this week’s best bets on TV is Food Network’s “Restaurant Takeover,” 8 p.m. Wednesday. Master chef Adam Hynam-Smith reworks the menu of “Hillbilly Heaven,” which serves roadkill.

We’re all for locally sourced ingredients, but there’s only so much a scallion chiffonade and balsamic reduction are going to do for steel-belted-radial-flattened possum.
