One of my fond memories of a trip to Hong Kong was watching a chef magically make noodles by twisting and tossing dough with dramatic flair in the middle of the restaurant.
The noodles are called la mian and typically used for soup. What reminded me of my trip to Asia was this fabulous littl
e video from The New York Times that shows and explains this style of noodle making. Warning: This video will make you hungry!
If you know of a local restaurant chef who makes la mian noodles, please let me know so we can track them down and let everyone else know where to go.
