  • In your own kitchen, hands-on with Karel Ann Tieszen, 6:30 to 9:30 p.m. Oct. 9, $75. Menu: cider-simmered squash soup with cheddar; pork tenderloins with raisin pignolia sauce; simple whole wheat bread; whole wheat pasta with goat cheese, walnuts and sundried tomatoes; miel madeleines.

  • Winter soups with Richard Worthen, 2 to 4 p.m. Oct. 18, $37.50. Menu: cream of acorn squash soup; winter wild mushroom soup; escarole and white bean chowder.

  • Healthy eating for busy people with Karen Lamphere, 6 to 8 p.m. Oct. 23, $32.50. Menu: artichoke-and-sundried-tomato pasta; zesty quinoa with broccoli and cashews, spinach frittata with chicken sausage.

  • Chili cook-off — contestants arrive at 11 a.m. Oct. 25 with prepared batches of chili; judging 11:30 a.m., customers sample chili from noon to 1 p.m.; judging at 1 p.m.; details at 425-258-4589, www.jmatheson.com.

  • Kids cook spooky treats and nutty fun with Susan Russell, 5 to 6:30 p.m. Oct. 28, for ages 7 to 12; $20. Mix, bake and decorate cupcakes, create edible nut-and-fruit sculptures.

  • On the side with Leslie Lightner, 6:30 to 8:30 p.m. Oct. 22, $38. Menu: sweet potato latkes; mashed potato gratin; green beans with hazelnut-lemon butter; roquefort, polenta and prosciutto spoon bread; caramel-apple bread pudding with caramel-bourbon vanilla sauce.

  • Sensational seasonal vegetables with Conni Brownell, 6:30 to 8:30 p.m. Oct. 23, $40. Menu: Jamaican carrot soup, potato-and-celery root gratin with prosciutto; beet-and-green-bean salad with herb dressing; jicama slaw; roasted fennel with parmesan; winter vegetable cobbler.

  • Brining and spice rubs with Leslie Lightner, 5 to 7 p.m. Oct. 25, $48. Menu: brined pork loin with onion, raisin and garlic compote; brined and herb-roasted turkey with apple cider gravy; grilled brined salmon with cucumber-fennel relish; grilled steak with chili cumin spice rub.

  • Knife skills with Seppo Farey, hands-on, 6:30 to 9 p.m. Oct. 29, $55, class limited to 16. Students bring own knives, help to prepare lemon cilantro chicken soup. Learn how to julienne, dice, chop, mince and fillet, plus tips for knife-sharpening and care.
