Vonny McCarver of Everett is having wonderful fun baking and eating her way through what she calls “a lot of great responses” from Forum cooks in answer to her recent request for a 7-Up cake recipe.
Today, she returns the favor and says, “It is time for apples! Sunday dinner, lunch boxes, and grab-and-go snacks, so with my love of cakes, I’m sending this recipe along.
“I believe I found it in the Herald magazine Relish. It’s called Jewish apple cake — and it’s made easily, stores well (freezes) and is delicious.
“Oy vey! Enjoy!”
Jewish apple cake
6cups peeled, thinly sliced Granny Smith or other cooking apples (about 3 large apples)
11/2cups plus 5 tablespoons granulated sugar, divided
4teaspoons cinnamon
3cups all-purpose flour
1tablespoon baking powder
1/2teaspoon salt
4eggs
1/2cup light brown sugar
1cup vegetable oil
1/2cup orange juice
21/2teaspoons vanilla extract
Preheat oven to 350 degrees. Grease, sugar and flour a 10-inch bundt or tube pan. (Be sure to grease pan really well, and don’t use cooking spray as it could cause the cake to stick.)
Combine the apple slices with the 5 tablespoons sugar and cinnamon and set aside.
Combine flour, baking powder and salt in a bowl and set aside.
Beat eggs with remaining granulated and brown sugars. Add oil, orange juice and vanilla and beat well. Gradually blend in the flour mixture and blend well, about 1 minute.
Pour 1/3of the batter into pan and top with half of the apple slices (drain off any liquid). Pour in half of the remaining batter and top with remaining apple slices. Top with the remaining batter, making sure to cover the apples.
Bake 55 to 60 minutes, until the top turns golden brown and a knife inserted near the center comes out clean. Let cool 10 minutes in pan, then turn out onto a wire rack and cool completely.
Makes 16 servings.
