As promised, we hear from Everett cook Nancy Thurmond, “So, here’s the green tomato bread recipe for all that want it. Interesting that I evidently got it from The Herald in the first place, no idea when.
“Sometimes, I will plant tomatoes just hoping that I’ll have some green ones – they’re tough to find to buy. Enjoy!”
Green tomato bread
2cups ground green tomatoes
1cup crushed pineapple
3eggs
1cup oil
2cups sugar
1teaspoon salt
1tablespoon vanilla
3cups flour
11/4teaspoons baking soda
1/2teaspoon baking powder
1cup raisins or craisins
1cup nuts, chopped
Turn ground tomatoes and pineapple into strainer or colander and drain well; set aside. In large mixing bowl, beat eggs, then add oil, sugar, salt and vanilla, mixing thoroughly. In a separate bowl, stir together the flour, baking soda and baking powder, then add to the egg mixture. Stir in the tomato-pineapple mixture, stirring well. Stir in raisins or craisins and nuts. Pour batter into greased and floured loaf pans (no size given, but probably two, 5- by 9-inch pans) and bake at 350 degrees about 1 hour, or until tester comes out clean. Makes 2 loaves.
Bits and pieces: Everett reader Ruth A. Johnson writes, “In the Sept. 15 Forum column, you had an SOS from Marge Somebody, asking why sauerkraut would turn dark.
“In the ‘Farm Journal’s Country Cookbook,’ it has questions and answers on sauerkraut, and one of them is what causes sauerkraut to darken occasionally.
“The answer is that it could be due to improperly cleaning the cabbage, uneven salting and a too-high curing temperature. Hope this is of help to Marge.”
