Chocolate, hands-on with Suzanne Hunter, 6:30 to 9:30 p.m. Jan. 30, $65. Topics include dipping, molding, making truffles and more; most recipes with dark chocolate, but some with milk and white, also.

“Ratatouille,” children’s cooking class with Susan Russell, 5:30 to 7 p.m. Jan. 30, $35, for ages 8 to 12, class limited to 10 students. Menu: crepes, quiche lorraine, ratatouille.

The beauty of braising with Richard Worthen, 2 to 4:30 p.m. Feb. 2, $55. Menu: braised lamb shanks with vegetables, chicken coq au vin and spaetzle.

“Perfect Endings,” dessert class with Cindy Erickson, 6 to 8 p.m. Feb. 4, $26. Menu: decorated shortbread cookies and decorated cupcakes. Class limited to 15 students.

Knife skills, hands-on with Kie Thompson, 6 to 7:30 p.m. Feb. 7, $20. Learn chopping, dicing, mincing, knife sharpening, storage, safety and more. Class limited to 15 students.

Japanese yosenabe dinner, hands-on with Hiroko Sugiyama, 2 to 5 p.m. Feb. 9, $75, limited to 15 students. Menu: sashimi with ponzu, grilled salmon rice balls, dessert of seasonal fruits and Matcha tea.

Chinese feast and barbecue with Tom Douglas, 6 to 8 p.m. Feb. 12, $72.50. Menu: sweet and hot fried almonds, lobster shiitake pot stickers, shrimp rolls with sweet chili sauce, wok-fried clams with Chinese black beans.

Valentine cake decorating with Carol Richardson, 6:30 to 8:30 p.m. Jan. 30, $35. Learn to make roses, carnations, rosettes, hearts, and reverse shell border and gum paste techniques.

Tapas party, hands-on with Hope Sandler, 6:30 to 9 p.m. Jan. 31, $55. Menu: tortilla espanola, Spanish omelet, garlicky shrimp, grilled portabella mushrooms with almond gremolata, serrano ham and manchego cheese crostini, herb-seasoned carrots, roasted almonds and marinated Spanish olives.

Olives and olive oil with Charlie Pancerzewski and Leslie Lightner, 6:30 to 8:30 p.m. Feb. 6, $35. Topics include a discussion of various types of olives and olive oil, and menu will feature savory tapenade, olive and goat cheese salad, balsamic marinated olives and quick classic penne puttanesca.

Gourmet truffles and wine tasting with Aaron Barthel, 6:30 to 8:30 p.m. Feb. 7, $30. Menu: a variety of truffles, including Jamaican hot chocolate truffle and others, featuring herbs.

Comfort foods refined with Conni Brownell, 5 to 7 p.m. Feb. 9, $40. Menu: roasted chicken and mushroom pot pie, macaroni and blue cheese with herbs, goat cheese and pancetta pizza, salmon cakes with sambal cream cheese sauce and spicy hot buttered rum.

Resident Cheesemonger: 405 Main St., Edmonds; 425-640-8949; www.residentcheesemonger.com. Cheese tastings, noon to 4 p.m. Saturdays. Cheese classes, 6 to 7:30 p.m. third Thursdays, free.

Sweet Basil’s in Edmonds: Reservations required for all classes. Unless otherwise noted, classes take place 7 to 9 p.m., Sweet Basil’s School of Cooking, 5820 156th St. SW, Edmonds; 425-743-7438.

Jan. 31, winter comfort food, $42.50. Menu: serrano chips with quince perserves and manchego; pork chop osso bucco on polenta with greens in garlic bread crumbs; grilled apple and goat cheese salad; pear and dried-cherry custard crisp.

Wine classes with Dieter Schafer: All take place at South Seattle Community College, 6000 16th Ave. SW, Seattle, unless otherwise noted. Prices are per person, for entire series, or in some cases, for the one-night class. Reservations or registration are required to the phone numbers listed below.
