* Summer pies and tarts with Carol Richardson, 6:30 to 8:30 p.m. July 18, $38. The delicious traits of summer fruits lend themselves to a variety of desserts. Menu: Strawberry pie, lime curd tart and rustic peach and blueberry crostata. Also will cover techniques for bakery-style flaky pie crust.

* The Classic Cookbook series with Hope Sandler, hands-on, limited to 16, $55; 6:30 to 9 p.m. Julee Ross and Sheila Lukins, “The Silver Palate,” July 19.

* Main dish salads with Conni Brownell of The Charmed Radish, 6:30 to 8:30 p.m. July 26, $40. Menu: Jicama and shrimp salad with orange-cilantro dressing; arugula, cucumber and chick-pea salad, Tuscan white bean salad with olives and tomatoes; chicken and penne salad with artichokes; lemon-herb vinaigrette and lobster salad with avocado and mango.

* Sweet chocolate revenge with Leslie Lightner, noon to 1:30 p.m. Aug. 1, $22. Menu: Double chocolate cream pie, chocolate ladyfinger cake and chocolate-banana trifle.

* Hawaiian and Pacific Rim cuisine with Hope Sandler, 6:30 to 9:30 p.m. Aug. 2, $55, limited to 16 students. Menu: Blackened ahi with soy mustard sauce, Thai melon soup, seared lemongrass crusted salmon with watercress ginger sauce.
