n Sushi: Feb. 8, Hands-on class with Kathy Entrop, chef and owner of Kathy’s Kapers. Sushi rice, vegetarian rolls, spicy tuna rolls and California rolls will be made. $70.

n Northwest Essentials: Feb. 10, demonstration class by cookbook author Greg Atkinson, with recipes from his latest book. $75.

n Everyday Mexican: 6:30 to 9 p.m. Feb. 2, $45. A fuss-free fiesta with such recipes as creamy corn soup with chicken and poblano chile; tequila-cane shrimp skewers; beef and potato soft tacos; and mexican shortbread cookies with chocolate and toasted pecans.

n Valentine’s Day cake and cupcake decorating: 6:30 to 9 p.m. Feb. 3, $48. A hands-on experience for making buttercream and gum paste flowers, with decorating techniques and additional recipes.

n Roasting: 6:30 to 8:30 p.m. Feb. 8, $48. Recipes easy enough to prepare any day of the week, including garlic studded beef sirloin roast with porcini mushroom gravy; apple cider brined pork loin with sweet beer and mustard sauce. Discussions of techniques for roasted meats, such as trussing, tying and brining.

n Tapas: 6:30 to 9 p.m. Feb. 10, $55. Hands-on, class limited to 22. Small plates of mushroom confit with orange and chili; manchego fritters; roasted pork tenderloin with dried fruit and brandy.

n Men only: Cooking for your sweetheart — 6:30 to 8:30 p.m. Feb. 3, $45. Prepare a beautiful meal for her, including classic Caesar salad, smoked paprika and Spanish olive braised short ribs with polenta, and flourless chocolate torte with whipped cream and raspberry sauce.

n French kiss: 6:30 to 9 p.m. Feb. 10 (hands-on) $55. More romance, with iced oysters, artichoke soup with parmesan lace and black truffle oil, chicken stewed in white wine with thyme and fig, chocolate-honey pot au cremes.

n Vegetarian main dishes: noon to 2 p.m. Feb. 12, $45. Learn to make yam and black bean quesadillas, white bean vegetable stew, and marinated grilled tofu. Vegetarian and gluten- free.

n Soup and quick breads: 6:30 to 9:30 p.m. Feb. 3, $55. Soup making and complimentary breads, such as shrimp etouffee with roasted corn hush puppies; gazpacho and homemade flour tortillas.

n Lunch and learn: noon to 1 p.m. Feb. 4, $25. Thai-inspired lesson and lunch. Demonstration of Thai pork and pineapple curry over jasmine rice. Dessert will be coconut creme brulee.

n Flatbreads and pizza: 9:30 a.m. to 12:30 p.m. Feb. 9, $50. Includes flatbread with figs, caramelized red onions, pears and chevre; grilled flatbread with shrimp, chorizo and cotija; pizza margherita; mixed wild mushroom pizza with gruyere, romano and truffle oil.

n Kids cook: 9:30 a.m. to 12:30 p.m. Feb. 12, $50. Class for kids 8 and older; Fried cheese ravioli with marinara sauce, beef pot pie with cornmeal crust and turkey burgers with grilled pineapple are some of the recipes.

n Vegetarian ease: 9:30 a.m. to 12:30 p.m. Feb. 15, $50. Includes Moroccan eggplant turnovers with sun-dried tomato sauce, butternut squash salad with champagne-shallot vinaigrette, cherries and fried goat cheese.
