Just when you thought you had all the latest cooking and recipe websites committed to memory, yet another one pops up.
This week, it’s the Just a Pinch Recipe Club. Founded in 2010 in Franklin, Tenn., the site is billing itself as “American’s Greatest Recipe Swap” geared toward “hometown” cooks across the country.
That includes at least one Snohomish County resident, Robyn Beach of Granite Falls, who recently shared her recipe for creamy mashed potatoes.
You can poke around the site with no strings attached, but you’ll have to sign up for a free membership to save recipes to a personal online recipe box, create grocery lists and plan meals and enjoy other more detailed features of the site.
Tip: Make getting a membership really easy by signing in with your Facebook account with just a few clicks.
Check it out here.
For now, here’s that recipe from Beach, who told Just a Pinch: “I discovered this recipe on accident. I just decided to take my recipe for twice baked potatoes and make mashed potatoes out of it! I use all different types of potatoes with this, from bakers to reds, whites and yellows! I even used purple ones once.”
Creamy mashed potatoes
4 large potatoes
1/2 stick butter, room temperature
1/2 package cream cheese
Salt, to taste
Pepper, to taste
Mrs. Dash seasoning, to taste
Boil potatoes with a pinch of salt until fork tender. Drain and let sit on hot burner for a few moments to burn off some of the steam.
Place in bowl and mash. Add in butter and cream cheese until well mixed.
Then add salt, pepper and Mrs. Dash to taste.
