The Western Washington Fair in Puyallup announces two new cooking contests at this year’s fair.
The Ghirardelli Chocolate Championship searches for the best chocolate creations featuring Ghirardelli baking products. First place wins $150; second place wine $50. The top three winners take home a Ghirardelli gift basket, a prize ribbon, apron and award certificate. For more information, visit www.ghirardelli.com.
The Fleischmann’s Yeast Dynamic Duo Baking Contest seeks entries of baked goods. First- through third-place winners take home cash and adult-child teams are eligible for bonus prize money.

Healthier frying
Canola oil is the healthiest option for achieving the good results from deep frying.
Eliminate deep-frying disappointment with the following techniques.
* Maintain a frying temperature of 375 degrees. If the oil is too hot, any coating will burn from the direct heat of the oil before the food cooks.
* Preheating the oil to a temperature 15 degrees higher than its optimal deep-frying temperature allows the oil to be at its ideal temperature when food is added.
* Do not add salt to food before deep-frying as it draws moisture to the food’s surface, which will splatter when the food is added to the hot oil. Salt also lowers the smoke point.
