What once seemed like a great dessert idea turned into nothing more than a wild goose chase for Annette Hoffman, who recently told us she’s been on a long and fruitless search for a recipe for strawberry-rhubarb pie.
“Unfortunately,” she concluded, “it seems that no one makes this pie any more. Could you try your readers to see if anybody knows how to make a strawberry-rhubarb pie now?”
In true Forum spirit, RedaGross immediately fired off her favorite version, one she has adapted from a pie she found at Allrecipes.com.
“For the topping,” she says, “I divide the sugar with half brown and half white. And, for the flour, I use half flour and half granola. This makes the crumbs darker and crunchier!”
So we can prepare this pie exactly as Reda does, the following recipe reflects her changes to the original ingredients.
Strawberry-rhubarb pie
Pastry for a 9-inch pie shell
4cups diced rhubarb
3cups sliced fresh strawberries
1teaspoon orange zest
1 1/2cups granulated sugar
6tablespoons quick-cooking tapioca
Topping (recipe follows)
Preheat oven to 400 degrees. Line a 9-inch pie pan with pastry and set aside. In large mixing bowl, combine rhubarb, strawberries, orange zest, sugar and tapioca, mixing thoroughly; turn into pie shell.
Prepare topping and spoon over filling. Bake at 400 degrees for 10 minutes, then reduce heat to 350 degrees and bake for an additional 35 minutes.
Makes one 9-inch pie.
Topping
1/2cup flour
1/2cup granola
1/2cup granulated sugar
1/2cup brown sugar
1teaspoon salt
1/2cup butter
In mixing bowl, stir together the flour, granola, granulated and brown sugars and salt, mixing well; cut in butter until mixture is crumbly.
