Pineapple, raisins give coleslaw a kick

Pineapple and marshmallows? In coleslaw? Why (as the old saying goes), what will they think of next?

Well, actually – and factually, too – let’s think about coleslaw with apple. Coleslaw with raisins. Even coleslaw made with Craisins.

Egads, what an applelicious, cran-raisinicious departure from the norm.

Everett cook Connie Harasimi shares our first option on this old classic today, noting she copied it from a 1975 edition of “Better Homes &Gardens Salad Book.”

And Archie Whisman of Edmonds says, “The coleslaw recipes are courtesy of “Quick Cooking,’ with the Craisin modification my wife’s idea. The flavors of the Craisins and apples complement each other for a most delightful taste experience. The golden raisins at first seem expensive, but a box of them – half-cup at a time – makes many batches of coleslaw.”

Apple-pineapple slaw

3cups shredded cabbage

1can (83/4 ounces) pineapple tidbits, drained

1cup diced unpared apple

1/2cup chopped celery

1/2cup mayonnaise

1cup miniature marshmallows

Apple slices for garnish (optional)

In large mixing bowl, combine cabbage, pineapple tidbits, apple, celery and mayonnaise; toss lightly. Cover and chill. Just before serving, fold in marshmallows. Trim with apple slices, if desired. Makes 10 to 12 servings.

Raisin coleslaw

2cups shredded cabbage (packaged slaw mix works fine)

1cup grated carrots

1/2cup mayonnaise

3/4teaspoon sugar

1/2cup golden raisins

1 1/2teaspoons honey

3/4teaspoon prepared mustard

1/8teaspoon celery salt

In a small bowl, combine the mayonnaise, honey, sugar, mustard and celery salt; set aside.

In a large serving bowl, toss the cabbage, carrots and raisins. Pour the dressing over the cabbage mix and stir well to coat. Cover and refrigerate until needed. Makes four servings.

Craisin coleslaw

2cups packaged coleslaw mix

3green onions, sliced

1/2cup Craisins (see note)

1/2large apple, chopped

1/2cup chopped celery

1/2cup mayonnaise

1tablespoon cider vinegar

1/4teaspoon pepper

1/4cup sugar

1/2teaspoon salt

In large bowl, combine the coleslaw mix, apple, green onions, dried cranberries, apple and celery. In a small bowl, combine the mayonnaise, vinegar, pepper, sugar and salt and mix well; pour over cabbage mixture and stir well to coat. Cover and refrigerate until needed. Makes four servings.

Note: Craisins are dried cranberries; look for them in packages at your supermarket in the produce section and dried fruit section.
