Don and Vicki Evola didn’t win the International Pizza Challenge at the International Pizza Expo in Las Vegas earlier this month.
But the couple, who run Brooklyn Bros. Pizzeria in Everett, didn’t return empty-handed.
Don Evola met an Italian pizza maker who makes pies for Pope Benedict XVI.
“When the pope wants a pizza,” Evola said, “he’s the guy who makes it.”
Through an interpreter, Evola received an on-the-spot lesson and emerged with the secret recipe from Antonio Starita.
Evola, who is also Italian, learned of a high-end finely milled flour as well as expensive olive oil to help him create the perfect Naples-style pizza.
He hopes to eventually offer a true Napoli pizza, perhaps once a week, in addition to the pizza parlor’s New York and Sicilian-style pies.
Evola wasn’t disappointed when he didn’t win. He was up against the veterans.
“I lost to the Italian gurus,” Evola said.
