Forum cooks have been busy supplying recipes for Chinese barbecued pork to keep Gracie Dinsmore and her family back there in Missouri from Asian-food starvation.

Well, today Jim Burns of Mukilteo shares a pair of recipes to help Gracie add to the meal.

“We were married in Honolulu in 1953,” he writes.

“We picked up a little cookbook of favorite island recipes while there. Here are two we really like.”

Fried rice

3/4cup diced Spam or any leftover cooked meat or shrimp

1small onion, diced

2tablespoons oil

1/2green or red bell pepper, diced

1rib celery, diced

2mushrooms, sliced

2-3 cups cooked rice

1/2cup peas

2tablespoons soy sauce

1egg, beaten

Fry Spam, leftover meat or shimp and onion lightly in the oil. Add bell pepper, celery, mushrooms, rice, peas and soy sauce. Cook over low heat for 8 to 10 minutes. Add egg and cook for 5 minutes, stirring frequently. Serve immediately.
