Second-dessert candidate for T-day

It’s not unheard of, you know, to need or want more than just one dessert to polish off our Thanksgiving dinners.

If pumpkin something or other is always a must-make offering at your house, apple something else might make a perfect second choice.

In which case, faithful Forum helper-outer, Marysville cook and cookbook author Dianne Berst tells us, “Lavon Woodey’s recent apple recipes sounded very good, so I’m inspired to send along my favorite apple cake, which is on page 77 of ‘Sharing Our Best.’

“That recipe came from a friend at church years ago when we were co-hostesses for a women’s meeting. It should be noted that the ingredients go into an UN-greased pan.”

Favorite apple cake

4cups diced apples (use soft apples)

2cups sugar

Scant 1/2cup oil

2eggs

2teaspoons vanilla

2cups flour

2teaspoons baking soda

21/2teaspoons cinnamon

1teaspoon salt

1cup walnuts, chopped

Cream cheese frosting (recipe follows)

In a large mixing bowl, combine the apples, sugar and oil. Beat eggs in a separate bowl, add vanilla and pour into the apple mixture.

Combine the flour, baking soda, cinnamon, salt and walnuts; mix together, then add to the apple mixture and mix well.

Turn into an ungreased 9-by-13-inch baking pan and bake at 350 degrees for 1 hour. Frost with cream cheese frosting when thoroughly cooled.

Makes 12 servings.

Cream cheese frosting

1package (8 ounces) cream cheese, softened

1/3cup butter, melted

1box (16 ounces) powdered sugar

1tablespoon milk or lemon juice

In a mixing bowl, beat cream cheese with an electric mixer until fluffy. Beat in melted butter, then gradually add powdered sugar and milk or lemon juice and beat until thoroughly combined.

SOS: Edmonds reader Doris Hoblitt writes, “Please, do you know of the dirt cake recipe? It is made in a sand pail with gummy worms. I had it and must have discarded it while cleaning out excess recipes.

“I’d also like to have the meringue recipe from a box of Argo cornstarch. The new cans don’t have it. Thank you, if somebody can help.”
