Specialty Seahawk-watching pizza

Against all odds, an earthquake-size, seismometer-rattling, 67-yard touchdown run by Marshawn Lynch handed the Seattle Seahawks a 41-36 playoff victory at Qwest Field last Saturday.

Come this Sunday, though, odds again stacked against them, the Seahawks will wade right in there, this time in the NFL playoff game in Chicago.

And we Forum cooks, thanks to the folks at Boboli, can wade in there, too, with either hearty appetizer pizzas or, rounded out by a hefty salad, a whole-meal, after-game pizza celebration. Make either or both, big or small, or one of each.

Whichever, whatever, here’s how:

Seattle shrimp Alfredo pizza

1 (12-inch) Boboli thin pizza crust

1/4 cup olive oil, divided

1/2 cup fresh cooked shrimp, peeled and deveined

1 cup shredded Monterey jack cheese

1 pear, sliced

1/4 cup diced bacon, cooked and crumbled

1 cup Alfredo sauce

Salt and pepper to taste

Fresh snipped thyme (optional)

Preheat oven to 450 degrees. Toss shrimp with 1 tablespoon of the oil, salt and pepper. Place on grill at medium heat for 1 1/2 minutes; turn and cook for another 1 1/2 minutes. Remove from heat and set aside. Brush pears with remaining oil. Place on grill for 2 minutes on flat side. Remove from heat and set aside. Spread Alfredo sauce on pizza crust, leaving a 1/2-inch border around edge of crust. Top with the cheese, shrimp, bacon and pears. Sprinkle with snipped thyme, if desired. Bake 8 to 10 minutes. Remove from oven and serve.

Makes one 12-inch pizza.

Note: For an 8-inch pizza, use an 8-inch thin pizza crust and two-thirds of the ingredients called for.

Chicago ‘double-coverage’ three-cheese and sausage pizza

1 (12-inch) Boboli original pizza crust

1 (5-ounce) package Boboli pizza sauce

1/2 cup shredded Mozzarella

1/2 cup Asiago cheese with garlic

1/2 cup grated sharp cheddar cheese

1 cup sliced, cooked sausage, hot or sweet

1/2 cup sliced baby bella mushrooms

1/2 cup chopped green pepper

Preheat grill to 450 degrees. Saute mushrooms and green peppers. Meanwhile, spread pizza sauce on crust. Top with sliced sausage, sauteed mushrooms and green pepper. Bake for 10 minutes. Layer the pizza with the 3 cheeses and return to oven until cheese is just starting to brown.

Makes one 12-inch pizza.
