Happy little cookie monsters are one thing. But malicious little icing gremlins? That’s where we draw the line.
So, if you clipped or ripped the Aug. 7 Forum recipe for “dry white icing — 7-minute type,” drag it out and discard it right now.
We’re going to go with a totally ungremlinized replacement in just a minute.
First, though, here’s what Lavon Woodey of Everett, the recipe’s contributor, says about this particular concoction: “This came from my aunt many years ago, and it has been a family favorite ever since. It’s not like the sticky 7-minute frosting I first used. And it’s a little less messy for little fingers to handle and to take on picnics.”
Next, we hear from Alderwood Manor cook Sylvia Timmerman, “I think this fluffy white frosting may be the frosting Katie Carpenter is looking for. It’s easy and not so sickly sweet as most frostings.”
Dry white icing — 7-minute type
1egg white
1cup granulated sugar
1/4 cup water
1/2 teaspoon vanilla
Turn egg white, sugar and water into the top of a double boiler; place over hot water and cook, beating constantly with an electric mixer, as usual for 7-minutes icings, until frosting forms soft peaks. Remove from heat, blend in the vanilla and spread on a cake or cupcakes. As the frosting sets, it will dry with a thin top crust.
Fluffy white frosting
1cup granulated sugar
1/3 cup water
1/4 teaspoon cream of tartar
Dash salt (optional)
2egg whites, unbeaten
1teaspoon vanilla
Bring sugar, water, cream of tartar and salt, if used, to boil, stirring until the sugar dissolves. Very slowly, add boiling mixture to egg whites while beating with an electric mixer. Beat constantly until stiff peaks form, about 7 minutes. Add vanilla at the end.
