No matter which way you harness them, peanut butter and chocolate are positively a marriage made in heaven.
So here we go with a double delight of a way to team them up, courtesy of Marysville cook Susan Maybee.
“As a 1951 Ballard High grad,” she says,” I spent the last 50-plus years trying to replicate those marvelous peanut butter cookies. The ones from Gail Lasher are the closest I’ve tried, though still not as wonderfully greasy.
“I thought your Forum readers might enjoy this recipe I developed recently.”
You’ll notice Susan also shares the perfect finishing touch, her how-to for pb and choc frosting. “I’m sure you could use any favorite frosting recipe, or even canned,” she says.
Peanut butter cupcakes
1 package Duncan Hines butter recipe cake mix
¼ cup butter
¼ cup peanut butter
Chocolate-peanut butter frosting (recipe follows)
Prepare the cake mix according to directions, substituting the butter and peanut butter listed for the ½ cup butter called for on the package. When the cupcakes are cold, spread with the frosting. Makes about 28 rather flat cupcakes with great texture and flavor.
Chocolate-peanut butter frosting
2 tablespoons unsweetened chocolate
2 tablespoons butter
2 rounded tablespoons peanut butter
2 tablespoons cocoa
2 cups powdered sugar (more if needed)
Milk as needed
Chopped peanuts (optional)
Melt chocolate, butter and peanut butter until smooth; add cocoa sifted with powdered sugar and add milk as needed to whip into a smooth spreadable consistency.
SOS: Arlington reader Nicki R. Burns-Amma writes, “I am sending this request for the O’Brien’s Turkey House poppy seed dressing recipe. Since they have closed their doors and are no longer in business, my family and I are sad that we can no longer get this dressing.
“They used to sell it by the pint, and I would buy it for all of our special occasion dinners at home. I have tried several bottled poppy seed dressings from the supermarket, and all of them fall flat. There is either something missing or something added to the purchased ones. If someone can pass this recipe along, I would be eternally grateful. Thank you in advance for any help you can give me.”
