What tasty creation do you make from turkey day leftovers?

Thanksgiving leftovers. Love ‘em or hate ‘em, everybody has ‘em.

After Americans gobble down 46 million turkeys for the upcoming holiday, there is still usually plenty to spare.

Some people believe Thanksgiving leftovers are as much a part of the holiday tradition as the feast itself.

Following that meal the quandary generally is where and how to fit all the foil wrapped packages, plastic film covered plates and bowls and food storage containers into a burgeoning refrigerator.

Luckily many guests beg for a few slices of the bird, with maybe a scoop of dressing to take home to keep the party going.

Turkey sandwiches are reportedly the most crafted creation using up the leftovers. When people tire of sandwiches, they turn to hearty soups and stews, casseroles, stir-fry dishes, pot pie, turkey a la king, Tetrazzini and salads to cull Thanksgiving’s leftovers.

Tilting the scales even further to take care for the meal leavings and reworking them into upcoming meals is that fact that this year’s traditional Thanksgiving dinner will cost 13 percent more than last year’s.

I like to make turkey enchiladas. Saute some onions, maybe with some zucchini, toss in chopped turkey, some refried beans, cilantro and spices, roll up with tortillas, pour pasta sauce over it all, cover with cheese and bake. For a quicker meal, slice the tortillas and make Mexican lasagne (with pasta sauce on top and bottom).
