Everett restaurant serves up South West cuisine and Pacific Northwest hospitality

Everett residents are spoiled for choice with great places to eat, especially for Mexican food—but not for New Mexican food! The New Mexicans is a unique eatery in the heart of Everett with its roots in the true South West.

South West Cuisine, Pacific Northwest style

Opened in 2012 by a native New Mexican, The New Mexicans became known for its authentic South West fare. Michelle De Simone, took a job as a weekend server, growing to love the place—and the business. When the restaurant was for sale, Michelle suggested to her parents that maybe it was time to change careers.

Old-fashioned values in the modern world go far

Everyone knows how tough the restaurant business is. You need to know your onions (and everything else as well), so for Michelle’s parents, Evie (a banker) and Vince (a Boeing 747 mechanic), it hardly seemed an intuitive fit – but some values translate across any business platform.

Everything at The New Mexicans is made from scratch using the authentic South West recipes that came with the restaurant and the De Simone’s additions to the menu. Authentic taste comes from authentic ingredients— only the best spices and freshest flavours are good enough!

In addition to great food, Evie and Vince brought some things that aren’t so common these days: Great customer service and hard work! It’s a true mom-and-pop, whole-family establishment (they even have aprons with Mom and Pop on them!).

It’s been a challenge and a labor of love: “When Michelle suggested buying the restaurant, my husband and I looked at each other and said, ‘Let’s do it!’” says Evie. They bought the restaurant in 2016 and have seen it through one of the toughest times in living memory, the COVID pandemic.

Giving back and saying “thanks!”

It’s been a grand adventure so far, and one they’re still enjoying. While daughter Michelle had the in-restaurant experience, Evie and Vince rolled up their sleeves and learned the business from the ground up, establishing a rapport with local customers and exemplifying those old-fashioned values of great customer service and hard work.

“We know our regulars,” notes Evie, “We’re part of our community and our community is part of us.” During the pandemic, Evie and Vince took delicious food to the staff at the local hospital, supporting those folks on the front lines, paying back the community in their own small way.

“Now the nurses and doctors come with their families to eat in the restaurant! “We’ve been so lucky to be here and it’s been just great!” she says.

The New Mexicans is known for its fantastic Happy Hour and especially for its Fish Bowl Margaritas. Like everything on the menu, premium authentic, fresh ingredients make for a treat you can’t beat.

  • Authentic Sopapillas (means soft pillows): fried bread served with homemade honey butter
  • Scratch Margarita with premium Tequila and fresh-squeezed lime juice
  • All the meats are hand-smoked by Vince himself

  • Mac and cheese for those who need a little less spice in their life
  • House-made, award-winning pies (Michelle is the genius behind these tasty treats)
