Rhubarb? Raid the garden or grab some from the freezer, because here comes the other recipe sent along by Everett cook Phyllis Henshaw.
As you will recall, she picked up a copy of “Good Ol’ Fashioned Rhubarb Recipes from Bremerton, WA,” during a summertime getaway to the Olympic Peninsula. Once home, and with a bumper crop of rhubarb (she credits it to the laying on of compost and her husband’s diligent watering), Henshaw put the recipes to work.
We’ll try the book’s rhubarb cobbler today, but not before we tune into our own Forum cook’s observations. “This is very tasty,” she notes, “but not enough juice. I would add 1/4 cup or more of water. The biscuits are very tender, but I’d omit the cinnamon next time.”
That said, what say we all try:
Rhubarb cobbler
4cups diced rhubarb
1cup sugar
2tablespoons cornstarch
1/4teaspoon cinnamon
1tablespoon water
2tablespoons butter
Topping (recipe follows)
Whipped cream or vanilla ice cream
To make the filling, mix the rhubarb with sugar, cornstarch, cinnamon, water and butter. Bring slowly to boil and cook 1 minute, stirring constantly. Pour into an 8-inch square baking dish. Prepare topping and drop by tablespoonfuls onto the filling. Bake at 400 degrees 20 to 25 minutes. This tastes best when served warm and topped with whipped cream or vanilla ice cream.
Topping
1cup flour
2tablespoons sugar
1 1/2 teaspoons baking powder
1/4teaspoon salt
1/2teaspoon cinnamon
1/4cup butter
1/4cup milk
1egg
In mixing bowl, sift together the flour, sugar, baking powder, salt and cinnamon. Cut in butter until crumbly. Beat together the milk and egg and then add to flour mixture; stir just to moisten.
