Touch of nostalgia prompts cookie sharing

Fond remembrances of her traditional childhood after-school snack, cookies and a glass of cold milk, prompted a Forum friend in Arlington to share a pair of recipes with us.

"Because,'' she said, "they're so good.''

No-bake fudge cookies

1/2 cup milk
2 cups sugar
1/2 cup cocoa
1 cube margarine
1/2 cup nuts (optional)
1/2 cup peanut butter, smooth or chunky
1 teaspoon vanilla
3 cups uncooked oatmeal

In a large saucepan, mix together the milk, sugar, cocoa and margarine; bring to a rolling boil and boil 1 minute.

Remove from heat; add nuts, peanut butter and vanilla and stir well. Add oatmeal and mix until well coated.

Drop by teaspoonsful onto waxed paper and let cool until hardened.

If the humidity is very high or you didn't let them boil long enough, they won't set. If this happens, scoop the cookies off the waxed paper and use as an ice-cream topping.

Makes 2 dozen.

Ginger creams

1/4 cup shortening
1/2 cup sugar
1 egg
1/2 molasses
2 cups flour
1/2 teaspoon each salt, nutmeg, cloves and cinnamon
1 teaspoon ginger
1 teaspoon baking soda dissolved in 1/4 cup hot water
Butter cream or other favorite frosting

In a large mixing bowl, combine all ingredients except frosting, mixing thoroughly.

Drop by teaspoonfuls onto a greased cookie sheet.

Bake at 400 degrees until brown, about 5 to 10 minutes. Cool, then spread with butter cream or other favorite frosting.

Makes 3 dozen.

SOS: Everett reader Juan Padron needs our advice. "The question I have,'' he writes, "is if I cut a recipe in half, will the food still taste the same?

"For example, the recipe for slow-cooked chili in the July 4 Forum -- if I just use one pound of hamburger, one can kidney beans, one can of tomatoes and half the amount of spices and vegetables, will that be OK?

"And, if I can do this, can I do this to any other recipe?

"Since the kids are gone, and it is just the wife and I at home, I would hate to toss out too much of the leftovers.''
