‘A hit every time’: Get your pastry fix at this Everett bakery

EVERETT — Walking into Choux Choux Bakery in Everett, customers get a whiff of the sweet, buttery smell lingering in the air before they even reach the front counter.

The small-batch bakery opened its doors 10 years ago. Since then, its offerings of freshly baked bread and pastries have earned Choux Choux a loyal following, according to the bakery’s owner, Rachel Schreffler.

“I’ve been able to count on seeing familiar and happy faces every week since we’ve been open,” she said.

Choux Choux sells more than 10 different types of breads, although customers are unlikely to see their favorite two days in a row. While baguettes are served every afternoon, to find the bakery’s most popular bread, a rustic loaf combining wheat flour and mixed seeds named “Hippie Wheat,” visit on a Thursday or Saturday.

“With the customers, they can count on a specific bread each day of the week,” Schreffler said.

Baking most of the breads is a three-day affair. It starts with making a levain from the bakery’s 10-year-old starter, named Beth, to putting the loaf in the oven.

A sourdough starter is a live, fermented culture of flour and water used as a natural leavening agent for bread. If properly taken care of, a starter can last indefinitely.

For those with a sweet tooth, Choux Choux rolls out a pastry counter full of sweet treats, from gooey cinnamon rolls to fluffy croissants, every day.

Although savory options are also available. Front-of-House Manager Lea Rosko recommends people pop in for pizza night, where fresh pizza with varying toppings is sold Wednesday through Friday, starting in the afternoon.

Growing up watching her mom bake, Schreffler said baking was always something she enjoyed. While it started as a hobby, eventually it became more for her.

“I thought I’d pursue something that I enjoy doing,” she said. “So pastry school it was.”

Early into pastry school, Schreffler recalled the head chef asking everybody what they wanted to do.

“I said right away I wanted to open up my own bakery because I like to do everything,” she said.

While she worked in various restaurant and bakery jobs after school, after moving to Everett from Seattle, the time was right. In 2016, she opened Choux Choux, naming it after her cat.

“Literally every day I walk in here is a wonderful moment,” she said.

Rosko has been employed at the bakery for the majority of its decade in business. For her, it’s a family affair. When her sister became a full-time baker for Choux Choux, Rosko took over the front-of-house position.

“She loved it so much, she dragged me in, and then I loved it so much I dragged my younger sister in,” she said.

If you’re spoiled for choice, try the almond croissant or the Danish, Rosko recommended.

“It’s a hit every time,” she said.
