Try Virginia Huxtable’s fruit crisp

Have you tried Camano Island cook Reda R. Gross’s recipe for slow-cooked turkey and stuffing with onion glaze? Yet?

If not, you’d better be doing it, because Betsy Berryman of Everett tells us, “I saw the recipe for the slow-cooked turkey and had to try it right away! I am so glad I did. It went over so well with my fiance, he took the leftovers for lunch!

“The only problem I had was finding a turkey breast and, believe it or not, apple jelly. I ended up using a Jenny-O frozen turkey breast roast.

“I would suggest to your readers, that if they plan on using this recipe, to plan a day or two out so the frozen ones can thaw, or allow for taking the time to defrost one in the microwave. I am also going to try the onions and jelly on a pork roast. Thanks for the recipe – love your column.”

Next, we hear from Carol Wilson of Everett, “At many family gatherings, family member Virginia Huxtable would bring her delicious blueberry fruit crisp. During dinner, there would be the usual chitchat. When it came time to eat her dessert, the only thing you heard was lip smacking!

“And we all left the table with a big smile.

“Virginia is in her 80s now and no longer cooks. When I recently talked to her on the phone, I reminded her how much we loved her blueberry crisp. I could hear the smile in her voice when she told me how much she loved making it for us.

“Memories like that, you don’t forget … “

Virginia Huxtable’s fruit crisp with blueberries

3-4cups blueberries (thawed, if frozen)

1/2cup sugar

1tablespoon flour

Cinnamon to taste

Crisp topping:

1cup flour

1cup sugar

1teaspoon baking powder

1egg

1/3cup oil

Whipped topping or ice cream

In mixing bowl, combine blueberries, sugar, flour and cinnamon; toss to mix, then pour into greased 8-inch square baking pan. For the crisp topping, in separate mixing bowl, combine flour, sugar, baking powder and egg, mixing thoroughly; pour over fruit. Drizzle oil evenly over top. Bake at 350-375 degrees for 40 to 45 minutes. Serve with whipped topping or ice cream.

Variations for fruit mixture: Apple: Mix apples same as blueberries. Peaches: Pinch of nutmeg may be added. If canned, sweetened, drained peaches are used, do not use sugar.
