Coconut bars a dream for fanatics

Personally speaking, it boggles my mind that not everybody loves coconut. Worse yet, there’s one of those no-coconut side of the fence persons, if such a thing can possibly be believed, in my very own family.

Be that as it may, and via a recent Forum request, those of us who do have a fondnes

s for this particular eat-treat favorite, are in store for another goodie.

“Enclosed is an old coconut recipe that’s been in our family for years,” Clinton cook and longtime Forum helper Doris Leidholm writes, as she shares this time-honored treasure.

Coconut dream bars

Crust:
1/2 cup butter
1/2 cup brown sugar
1 cup flour
Filling:
1 cup brown sugar
1 scant tablespoon flour
2 eggs
2 tablespoons baking powder
1/4 teaspoon salt
1 1/2 cups coconut

For the crust, in a mixing bowl, combine the butter, brown sugar and flour and mix until it’s a crumbly mass. Press onto the bottom of an 8-by-12-inch baking pan and bake 10 minutes at 350 degrees.

Meanwhile, for the filling, in a separate mixing bowl, combine the brown sugar, flour, eggs, baking powder and salt, mix together well, then mix in the coconut.

When crust is ready, remove from oven, spread evenly with the filling mixture and return to oven for about 20 minutes. (Baking time depends upon type of baking pan used.) Remove from oven, cool a little, and then cut into bars. Makes one 8-by-12-inch baking pan.

I was a regular at the Turkey House for years, just loved their yeasty cinnamon rolls and wonder if there is a recipe for those wonderful Turkey House cinnamon rolls?”

RSVP: A terrific sale on black jeans a few months ago has left a number of us with a real problem. Heavy-weight denim, stitching all intact and tight, zipper and button functional, you know the standard cash-in-on-this-great-buy drill.

But, they stink. Reek. They smell awful, terrible and very bad besides. But not a one of us had a clue about that until they came home, were delabeled, unstickered, tags cut off, and ready to hit the soak-wash-rinse cycles to remove the excess dye.

Whereupon we found that airing them doesn’t work. Neither does soaking, washing, drying and more airing. Neither does soaking in washing soda, followed by wash/ dry, neither does a soak in Borax, then through the wash cycle, and even Pinesol followed by the rinse, wash / dry / airing routine work.

We aren’t talking about a faint, nose to the denim sniff test, people. This is the kind of odor you can smell, after weeks of various treatments, on your beloved when you’re sitting in his pickup on the way to get groceries, standing in the checkout line, next to him in not-that-close proximity on the sofa / davenport during the evening …

Needless to say, if you have anything to suggest, we dye-destroyed people will majorly appreciate it. So, too, will we appreciate it if anyone has and is willing to share the exact, specific recipe for the Turkey House’s cinnamon rolls, in all their sweet, yeasty goodness.
