This fall I am formally embracing a role I have been circling for the last couple of years. I am a Nourishment Coach! The new venture is called Half Her Size (because I am!). To kick things off – cooking classes are back! It has been about two year since the last series. Those classes were so well received I am thrilled to be able to offer a brand new menu. It was such a delight to step away from the page and actually meet readers at those first classes.

How to Roast a Chicken and Eat For a Week!

You probably eat chicken all the time, BUT do you know that a whole bird is the least expensive way to buy chicken? Roasting a whole chicken is a simple skill that pretty much anyone with an oven can master. With this skill in your arsenal weeknight dinners will come together in a flash!

If you are ready to eat more home cooked meals, but don’t know where to start, you are right where you need to be.

When you finish this three hour hands-on class you will be able to say:

  • I made healthy food that didn’t feel like a diet and it tasted really good!
  • I can absolutely do this again at home!

The Class Menu:

  • A whole herb and lemon roasted chicken
  • Comforting Chicken Noodle Soup
  • Weeknight Potato Hash with a poached egg
  • Zesty Chicken Salad, for wraps or sandwiches

We will cook together then share a meal around the table, and finish with a little something sweet. You will leave with all the recipes from the class, soup and a biscuit for lunch the next day, and a portion of the roast chicken to transform into a dish of your choosing.

In addition to the recipes I will share my personal brand of common sense for healthy living in the real world.

Class Dates: Oct. 2, 4, 17 and 19.
