Hot and spicy marinades make great grillers

Here are three brightly flavored marinades that are good for cooking on the barbecue or in the oven.

Place the marinade in a glass baking dish or other nonreactive dish; add your chosen pork ribs, chicken pieces, fish or vegetables; cover with a lid or foil and marinate at least 1 hour or overnight in the refrigerator.

When you are ready to use, before grilling, drain and discard marinade. Then go ahead and cook your entree. That’s it.

Smokin’ chipotle honey marinade

1/4cup ketchup

1/4cup honey

3tablespoons chipotle pepper sauce

1tablespoon cider vinegar

1teaspoon salt

In medium bowl, combine ketchup, honey, chipotle pepper sauce, vinegar and salt. Mix well.

Makes 1 cup.

The distinctive flavors of citrus and fennel make this marinade a good choice for fish or vegetable grilling.

Citrus fennel marinade

1/4cup extra-virgin olive oil

2cloves garlic, minced

2tablespoons fresh-squeezed orange juice

1tablespoon fresh-squeezed lemon juice

1tablespoon grated orange zest

1teaspoon salt

1teaspoon fennel seeds

1teaspoon hot pepper sauce

1/4cup fresh chopped parsley or dill

In medium bowl, combine olive oil, garlic, orange juice, lemon juice, orange zest, salt, fennel seeds, hot pepper sauce and parsley. Mix well.

Makes 11/4 cups.
