Mix ham-potato ‘salad’ in a skillet

When Everett cook and longtime Forum friend Cheryl Olsen sent along her mother’s special recipe for potato pancakes, she also tucked in two other favorites.

Let’s start with this one that’s especially geared to give us an easy, busy-day, quick-fix dinner.

“This ham-potato combo,” she says, “is a real favorite with all the men and boys in our family. I like it because it goes together fast. I even make it with raw potatoes, just allowing them to cook to doneness first.”

Skillet ham salad

1/4cup chopped onion

1/4cup chopped green bell pepper

2cups diced cooked ham or wienies

1tablespoon butter

3cups cooked diced potatoes

1/4teaspoon salt

Dash pepper

1/4cup mayonnaise

1 1/2cups diced cheddar cheese

In a large skillet, cook onion, green pepper and ham or wienies in hot butter, stirring occasionally, until meat is lightly browned. Add potatoes, salt, pepper and mayonnaise. Heat, mixing lightly, then stir in cheese and heat just until cheese begins to melt.

Makes 4 servings.

SOS: Most of us, from time to time, on the spur of the moment, buy something on sale. Then, weeks on down the line, we wonder why and/or what for. Here’s a classic and heartwarming example: Madeleine Taggart of Mukilteo was scooping up bargain-price bottles of herbs and spices a couple of months ago, and couldn’t resist throwing in a couple of unknowns. Does anybody know how to use/have recipes for powdered adobo seasoning?

SOS: Arlington reader Vance D. wants to take the firepower of his homemade jerky up a notch or two, and is hoping kindred souls with asbestos mouths can come up with a plan. What he’d really like is a jerky marinade recipe that includes habanero peppers.

SOS: Susan K. Cox recently had a cup of daal soup at a Mukilteo restaurant that was “heavenly,” and is now hoping Forum cooks may be able to share an equally heavenly recipe for this ethnic specialty.
