What’s a breakfast bar? In this case, it’s a fruity bar that’s softer than a granola bar, and not as sweet as many bar cookies.
They contain a generous amount of oatmeal, which makes them seem like a suitable way to start the day. The recipe calls for chocolate pieces; I left these out and used coconut instead.
The recipe is adapted from “Towns, Trails &Special Times: The Marlboro Country Cookbook,” one in a series of promotional cookbooks published in the 1990s.

Breakfast bars
1/2cup butter, softened
1 1/4cups packed brown sugar
2eggs
1/3cup molasses
13/4cups flour
1teaspoon baking soda
1teaspoon salt
1teaspoon ground cinnamon
2cups oatmeal
3/4cup chopped walnuts
1cup raisins, dried cherries or dried cranberries
1cup semisweet chocolate pieces or chunks (or substitute coconut)
Preheat oven to 400 degrees. Grease a 9×13-inch baking pan.
Combine butter, sugar, eggs and molasses in a large mixing bowl.
In another bowl, stir together flour, baking soda, salt and cinnamon. Add dry ingredients to moist ingredients and stir to combine.
Stir in the oatmeal, walnuts, dried fruit and chocolate or coconut. Spoon into prepared pan; cover with wax paper and press to spread mixture evenly into pan. Discard paper.
Bake for 12 to 15 minutes or until done. Cut into 16 bars.
