Looking for something different to do with cranberries? How about this honey of a pie, which comes to us courtesy of faithful Forum helper-outer Karen Hume of Everett.
Then, as long as you have the honey jar out anyway, you might want to whip up a quick batch of beehives. This confection was sent along to us by Edmonds cook Lois Zahler, who found it in a collection of recipes published by the American Beekeeping Federation Inc.
Cranberry pecan pie
2cups fresh or frozen cranberries
1cup orange juice
1/2cup honey
2tablespoons cornstarch
2tablespoons cold water
1/2teaspoon orange extract
1pie shell (9 inches), baked and cooled
Pecan topping (recipe follows)
In medium saucepan, combine cranberries, orange juice and honey. Cook, uncovered, over low heat for 15 minutes if using fresh cranberries, or 20 minutes if using frozen berries. Remove from heat and cool. Puree cranberry mixture in blender, then return to saucepan. In a small bowl, stir together the cornstarch and water; stir into cranberry mixture. Bring to boil and cook, stirring, until thickened. Stir in orange extract, remove from heat and cool. Pour into pie shell.
Prepare pecan topping and spoon evenly over cranberry mixture. Bake at 350 degrees 20 minutes or until top is bubbly. Cool on wire rack. Serve at room temperature or chilled. Makes 8 servings.
Pecan topping
1/2cup honey
3tablespoons butter or margarine
13/4 cups pecan halves
In medium saucepan, combine honey and butter or margarine; cook and stir 2 minutes or until mixture is smooth. Stir in pecan halves until well coated.
Beehives
1/4cup honey
1teaspoon vanilla
1egg, beaten
2cups shredded coconut
1cup chopped walnuts
1cup chopped dates
2tablespoons flour
In mixing bowl, combine honey, vanilla and egg. Beat until well blended. Stir in coconut and nuts. Coat dates with flour and add to honey mixture. Drop by tablespoon onto greased cookie sheet and bake at 325 degrees for 12 minutes or until done. May be formed into shapes for special occasions.
