An old recipe for Spam lovers

Even if you yourself don’t particularly like Spam, chances are better than good there are guys in your life — toddlers, oldsters or the twixters in between — who love the stuff.

Here’s one, then, for those special Spammers at your house, courtesy of Cherie Smith.

She tells us, “My mother passed away in October and I received her many cookbooks. I found recipes for Spam and was very intrigued that she had them still in her recipe collection.

“They are on a piece of paper that was printed front and back. As you can see, the paper is very old. I would think it dates back to the 1950s.”

Cherie’s mother’s “paper” includes this notation: “Now, four tempting main dishes from quick family dishes to elegant supper dishes.

“All recipes were inspired by Grand National recipes and have been adapted by Ann Pillsbury. These recipes can be clipped and stored in your card file.”

Let’s try this one:

Savory supper casserole

1can (4 ounces) mushroom stems and pieces, drained

1/4cup butter

1/4cup flour

2cups milk

1can (16 ounces) Veg-All mixed vegetables, drained

1can (12 ounces) Spam, cut in bite-size pieces

Cheese baconette swirls (recipe follows)

Saute mushrooms in butter until tender. Stir in flour. Add milk, vegetables and Spam. Cook, stirring constantly, until mixture comes to a boil. Pour into a 21/2-quart casserole and set aside.

Prepare the swirls according to following recipe and place on mixture in casserole. Bake at 400 degrees for 25 to 30 minutes.

Makes 6 to 8 servings.

Cheese baconette swirls

6strips bacon

11/2cups flour

3teaspoons baking powder

1/2teaspoon chili powder

1/4teaspoon salt

1/3cup shortening

1egg

1/3cup milk

11/2cups shredded American cheese

Fry bacon until crisp; crumble. Combine flour, baking powder, chili powder and salt in mixing bowl. Cut in shortening until particles are fine. Combine egg with milk. Add to dry ingredients; stir until dough clings together. Knead on floured surface 12 times. Roll out to 12-inch square. Sprinkle with cheese and bacon. Roll up; cut into 8 pieces. Proceed as directed above.
