Style: A single hopped IPA made with Azacca, a low-trellis hop

My thoughts: Dwarf hops are back in popular demand. Unlike the more popular high-trellis hops, which grow on trellises as high as 18 feet off the ground, low-trellis hops grow closer to the ground, about 8 to 10 feet.
Recently, Diamond Knot head brewer Pat Ringe started brewing some experimental batches using dwarf hops from Roy Farms in Moxee. Out of those batches came this IPA, brewed exclusively with Azacca hops.
Ajen Birmingham, DK brand ambassador, said that the grain bill was built based on the experimental batches, and was formulated specifically to showcase the the unique hop.
The result is a light, drinkable IPA that is perfect for summer. The beer has a fruity profile (think mangoes) and has a slightly dry, bitter finish. A lively carbonation cleans off the palate.
The beer has been supremely popular. While I was at the taproom earlier this week one of the kegs blew, and Birmingham said the beer has been the fourth-best selling beer since it was unveiled — even outselling DK’s Blonde.
Diamond Knot is planning to move forward on using dwarf hops in other beers over the next few months. Birmingham said there are plans to make a saison, imperial IPA and pale ale with dwarf hops.
From the brewery: This refreshing IPA is made with Azacca dwarf hops. Look for hints of honey leading to a fruity middle with papaya and mango-like flavors. Despite the complex flavor profile, it’s surprisingly light on the palate. Finish is slightly dry and very satisfying.
