Summer pies and tarts with Carol Richardson, 6:30 to 8:30 p.m. July 30, $35. Menu: strawberry pie, lime curd tart, rustic peach and blueberry crostata. Students will get tips on making flaky pie crusts.

Portable palate pleasers with Leslie Lightner, 6:30 to 8:30 p.m. July 31, $35. Menu: grilled chicken and fresh basil wraps; shrimp-and-asparagus salad; cashew chicken salad with mandarin oranges; spiced bulgur and chickpea salad.

A dozen five-minute summer sauces with Hope Sandler, 6:30 to 9 p.m. Aug. 6, $45. Menu: Thai barbecue sauce; hot peach and ginger grilling sauce; rosemary oil; hazelnut pesto; apple cider gastrique; balsamic glaze; black olive-and-lemon peel tapenade; Caesar dressing; chermoula; dark cherry port sauce; garlic aioli; papaya-mint salsa.

Dips, spreads and little plates with Leslie Lightner, 6:30 to 8:30 p.m. Aug. 13, $35. Menu: spicy shrimp with avocado dipping sauce; red and blue tortilla chips with black bean dip and Lone Star pico de gallo; pita bread with vegetable-topped hummus and feta pepper dip; fresh vegetables with cucumber yogurt dip; summer fruits with creamy fresh blueberry dip.

Summer fruit and vegetable sides with Conni Brownell, 6:30 to 8:30 p.m. Aug. 14, $38. Menu: tomato bread pudding; roasted beets with blackberry-mint vinaigrette; Napa cabbage and radish slow with spicy buttermilk dressing; spinach and leek gratin with blue cheese crumb topping; peach crisp with ginger-pecan topping.

Cool chocolate sensations with Leslie Lightner, 6:30 to 8:30 p.m. Aug. 20, $40. Menu: chocolate-cream espresso torte; chocolate chip ice cream sandwich cake with butterscotch sauce; chocolate truffle cake with raspberry sorbet; fresh berries with white chocolate sambuca cream.

Menu: beet carpaccio with orange-coriander vinaigrette; preserved tomatoes with lemon thyme; summer-squash salad with herbs and pecorino fresco; wild salmon with lemon-caper butter rub, blueberry sauce and lemon risotto; seasonal vegetable; summer greens salad; berry buttermilk cake with vanilla creme fraiche.

Southwest seafood extravaganza, Aug. 14, $42.50. Menu: avocado-and-shrimp cocktail; fish tacos; green rice and seasonal vegetable; fresh fruit tacos on white chocolate ganache.

Wine classes with Dieter Schafer: All take place at South Seattle Community College, 6000 16th Ave. SW, Seattle, unless otherwise noted.
