n Chicken-omics 101 — 6:30 to 9 p.m. Jan. 13, $45. Tips for roasting, sauteing, frying, stuffin

g and tenderizing. Recipes include chicken roasted with mint-cilantro pesto and oven-fried with walnuts and rosemary.

n Brownie throwdown — 6:30 to 9 p.m. Jan. 19, $48. Whether it’s fudgey, chewy or cakey, submit your favorite brownie recipe by e-mail to leslie@culinaryeventsnw.com, and maybe it will join the competition in this hands-on class.

Fried cauliflower with tahini dip, fattoosh (pita bread salad with fresh parsley, tomatoes and cucumbers),fatayer (savory cheese turnover), lamb kibbeh bi labneh (cracked wheat and lamb meatballs in lemony yogurt sauce), muhallabieh (rice pudding with orange blossom syrup).

n Converting for Health Workshop — hands-on, noon to 2 p.m. Jan. 15, $55. Rachel Duboff, chef and owner of {thyme to Nourish}, www.thyme2nourish.com, leads an interactive health workshop covering recipe conversions to address common health concerns, such as high blood pressure, diabetes, arthritis, and inflammation. Duboff is certified nutritional therapist.

n Power foods — 6:30 to 8:30 p.m. Jan. 19, $45. Recipes that are highly nutritious, low fat, high in protein and fiber, such as multigrain hot cereal with fruit compote and homemade vanilla yogurt, hummus with baked cauliflower, mediterranean tuna, feta, and kalamata salad, homemade no cook protein bars.

n Lunch and learn — Noon to 1 p.m. Jan. 14, $30. Italian lunch demonstration, with tricolor chopped salad, Bolognese sauce with lasagna noodle chards and sour cream mocha cake.

n Pizza with passion — 9:30 a.m. to 12:30 p.m. Jan. 15, $55. Make interesting pizzas with fire-roasted cherry tomatoes, blue cheese and spiced candied pecans; corn, asparagus, brie and pesto; crab and artichoke pizza with tarragon lemon cream sauce and romano cheese; and kung pao peanut chicken pizza.

n Tuscan traditions — 2 to 5 p.m. Jan. 15, $55. Creamy artichoke soup; panzanella salad; pan-roasted chicken and lemon risotto with shrimp and peas.

n Tapas and paella — 9:30 a.m. to 12:30 p.m. Jan. 18, $60. Tapas lesson includes shrimp and chorizo croquettes; dates stuffed with almonds and Spanish blue cheese wrapped in bacon; lamb and artichoke rice cakes with manchego cheese; The paella will be made with mushrooms, serrano ham, chorizo and mixed seafood.

n Fish for all seasons — 6:30 to 9:30 p.m. Jan. 19, $60. Learn to prepare many types of fish, including tilapia corn chowder; pan-fried catfish with tartar sauce and cornbread salad; toasted spice salmon burgers with orange-apricot glaze and curried mustard mayo; oven roasted red snapper fillets with tomatoes, onions and tomato water.
