Unable to find — even after years of endless searching here, there and everywhere — a certain lost frosting recipe, Katie Carpenter of Everett decided to write to the Forum…
“I believe it had corn syrup and/or egg whites,” she recalled. “It tasted like a time-consuming seven-minute frosting, but didn’t require the double boiler, etc. Sure would be nice to get that recipe again — can readers help?”
And how! To date, 11 Forum cooks have sent along a total of 15 recipes. Wow!
Let’s begin with a treasured, time-honored oldie shared by Camano Island cook Judy Schalka, who says, “This recipe is from my 91-year-old mother’s file! Katie, I hope it’s what you remember.”
Next, a husband, instead of a mom, is to thank for another take on the subject. Sheri McKnight of Stanwood tells us, “I think I might have a recipe for the ‘tastes like seven-minute frosting.’
“My husband gave me this when we met 22 years ago, and I have been using it ever since, with never a problem. I hope this will do the trick for Katie Carpenter.”
Instead of heating the corn syrup to boiling in a saucepan, clever Sheri says, “I do it in the microwave — takes about 5 minutes at 650 watts.”
And last but not least today, we hear from Marli Holden of Lake Stevens, “This ancient recipe dating back to my earliest childhood (some 65 years ago!) is called mile-high frosting.”
Mom’s boiled frosting
1cup sugar
1/3cup water
1/4teaspoon cream of tartar
Dash salt
1tablespoon light corn syrup
1egg white, unbeaten
1teaspoon vanilla
In a saucepan, combine the sugar, water, cream of tartar, salt and corn syrup; bring to boil, stirring to dissolve sugar, and boil until mixture is clear. Remove from heat and beat into the egg white; stir in the vanilla.
Husband’s corn syrup frosting
11/4cups light corn syrup
2egg whites
Pinch salt
1teaspoon vanilla
Heat corn syrup to boiling in either a saucepan on the stovetop or in a microwaveable container in the microwave (takes about 5 minutes at 650 watts).
Beat the egg whites in a large bowl until they form soft peaks. Add salt. Slowly pour in the boiling corn syrup while continuing to beat the egg whites until the mixture is fluffy and forms peaks when the beaters are raised. Fold in the vanilla.
Mile-high frosting
1cup light corn syrup
2egg whites
1/4teaspoon salt
1teaspoon vanilla
Put all ingredients into a mixer bowl and beat at high speed until VERY stiff and able to form stiff peaks when the beaters are removed.
Can add food coloring or use another flavoring. Spread on cake thickly.
One variation is to tint it green and use mint flavoring, then drizzle melted chocolate chips over entire cake.
