Hungrily anticipated, the annual Great Grilled Cheese Meltdown at the Comfort Diner’s two branches in Manhattan, N.Y. offers customers a special grilled cheese sandwich on the menu each day of February.

Here are some of the daily creations being offered on the bill of fare this year, to inspire home cooks in search of variations from the routine:

  • Gorgonzola, pears, walnuts and dried cranberries on a baguette.

  • Monterey Jack and pesto chicken on whole-grain bread.

  • Havarti with roasted garlic on ciabatta.

  • Chipotle cheddar and bacon on white bread.

  • Smoked mozzarella, prosciutto, tomato and basil on Italian bread.

  • Smoked cheddar with caramelized onions on pumpernickel.

  • Muenster and Black Forest ham on an onion roll.

  • Provolone with grilled eggplant on black olive bread.

  • Greek kasseri with spinach in a pita.

  • Colby and chili on a burger bun.
