In July, GE will introduce a free-standing range with induction technology, which cooks with a magnetic current instead of direct heat.
Advantages
Induction cooking, more commonly used in commercial kitchens, offers, according to GE, the “responsiveness of gas, remarkably fast heating and excellent efficiency.” Surfaces surrounding the burners do not get hot.
Limitations
Induction cooking requires steel or magnetic pans to conduct the current properly, meaning the core of the pans used must be ferrous or rich in iron. Regular stainless steel cookware won’t cut it, but cast iron and magnetic stainless steel pans should work.
Cost
$3,299 is the suggested retail price.
